New Year's Resolution

I love New Year's Resolutions. I also love vegetables. I don't think I can overstate this enough. I like to eat five servings of veggies a day, on top of four servings of fruit, and I'm going to try to stick to this more rigorously in the coming year. Here's a sampling of the veggies I ate before I left for California: Red beets and their greens, pea shoots, English cucumbers, artichokes, and flowering baby broccoli.

The cucumber I slice up and use in lieu of crackers, in this case with an egg salad (hard boiled eggs, salt, pepper, Dijon, mayonnaise, cayenne, and capers).
The beets are a double whammy of awesomeness--I roast the roots and then make a salad out of them with a Dijon, shallot, and red wine vinaigrette, plus a crumbling of goat cheese. I steam the greens until they're tender, and eat them as a side dish. I think I like them better even than Swiss chard or spinach, and they're more tender than Russian Red kale.
The dressing I used for the pea shoots: olive oil, balsamic vinegar, soy sauce, and a bit of Sriracha.
Another tea-time snack: Bosc and Anjou pears, cucumber and some extra sharp raw milk cheddar from New Zealand.

  3. Erica--And this is New York Produce...watch out for my California Farmer's Market post, it will blow your mind! And it's weird that beets don't exist in an Alpine winter...frozen ground, maybe?
