Relative Freedom

Here's what I'm eating now that my 21 Day Whole Living Challenge is over. Breakfast is Russian rye bread with Fage greek yogurt, smoked Alaskan salmon, dill, capers, and lemon, with a side of English cucumber. I've also been drinking a smoothie every morning, which I think may warrant its own post. It's just that awesome.


The best summer snack maybe ever: Iced mango black tea and a bowl of Siggi's vanilla yogurt with fresh blueberries and strawberries.

I recently discovered Siggi's (at Target, no less), and now I am enchanted. It's nonfat Icelandic skyr-style yogurt from upstate New York. Skyr is the same concept as greek yogurt--extra-strained, so it's extra-thick. And Siggi's has some awesome flavors. My favorite to go with fruit is the Madagascar bourbon vanilla, but the açai and mixed berries above is great on its own.
All the info, in case you were curious. On top of the deliciousness, I love the packaging.

My farmer's market finds that were turned into dinner: Sweet corn, turnips and their greens, and some especially succulent asparagus.

And dinner: Roast chicken with a Chinese five-spice rub, a quinoa and corn salad with curry dressing and cilantro, turnips and greens with olive oil, and a lot of asparagus.

  1. Your healthy meals are so inspiring! I need to start making quinoa again. I just read an article in Bon Appetit about whole grain salads. Another salad that sounds great is black barley, fennel and radish salad with citrus vinaigrette.

  2. Oh dear this is making me so happy for you, and jealous, and hungry! haha :) How did you prepare the turnips, and where in the world did you find such pretty plates?! And I'll have to try siggis, I've been living off of target brand yogurt, which is delicious because strawberry shortcake and banana cream pie! but also full of hfcs :(

    1. I steamed the turnips and greens. It was good, but next time I think I might roast the turnips and steam the greens separately. I'm glad you like my plates! My brother gave the cherry-blossom pattern ones to me for my birthday, and the other two were Anthropologie sale finds. And Siggi's is sold in Safeways in CA! So you can try it!
